Calem Chadwick is a highly respected, multiple award winning bartender who is regarded as one of the best in the industry he has been a part of for over 19 years. Calem has worked at and run over 25 bars up and down New Zealand, but is best known for the five years of tenure at the legendary Matterhorn in Wellington.
More recently, after working with 42Below he was the Brand Ambassador for New Zealand’s own Stolen Rum. Then in 2012 he made the move to join Beam Suntory where he was the National Brand Ambassador for three years before joining the Lion Ambassador Team where he now fronts the powerful portfolios of Diageo and Campari.

We will delve into how smoke appears in whiskies, from its origins, all the way through to the blending process. The session will study how Johnnie Walker’s Master Blender, Dr Jim Beveridge, takes untamed, maritime smoke - found in whiskies such as Talisker and Caol Ila - and expertly weaves them through all Johnnie Walker’s blends to give them their signature, smoky style. We will then explore the science behind how smoke works as a flavour and when combined with Dr Jim’s principles can be the cornerstones of World Class cocktail design.
